Apple Pie Pop-Tarts - Flaky Pastry, Homemade Apple Filling and a Sweet Cinnamon Frosting – Pie for Breakfast Anyone?
So who else loved pop-tarts growing up? I vaguely remember having pop-tarts as a child. We definitely didn't keep them in the house as a snack. If I was lucky enough to have any of these sugary delicious treats, I would have to visit one of my friends or trade snacks during lunchtime at school.
What is a Pop-Tart?
What is a pop-tart exactly? A little pastry crust, a little fruit filling and a little icing. A breakfast option that you can eat with your hands and on the go. It's just that simple.

How to make the Apple Pie Pop-Tarts
- Start by rolling out two refrigerated pie crusts. Cut off the edges to form a square.
- Then cut the square down in 3x4 inch rectangles, divide in half. Drop a spoonful of apple mixture onto half of the rectangles (about 1 tablespoons).
- Take a little water on your fingertips, and run around the edges of your bottom crust, then add a top crust and push down to seal it.
- Crimp the edges with a fork, pushing down softly.
- Bake until golden, for 15 minutes at 350 degrees.
- If desired, whisk together all of the glaze ingredients (if it is too thin, add more sugar).
- Remove Pop-Tarts from the oven and let cool for about 10 minutes. Then drizzle the frosting over the top.
These little beauties are so easy to make. Maybe not as easy as pulling them out of a box, but definitely worth the little bit of effort. Homemade pop-tarts to eat fresh every morning! Flaky crust + delicious filling = breakfast heaven. Now these are pop-tarts worth the calories!

Ingredients
- 2 refrigerated pie crusts
Apple Cinnamon Compote:
- 2 Honeycrisp apples peeled and chopped
- 2 tablespoons butter
- 2 tablespoon honey
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- pinch of salt
Glaze
- 2 tablespoons almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon maple syrup
- 1 teaspoon ground cinnamon
- 1 cup powdered sugar
Instructions
Apple Cinnamon Compote
- Melt the butter in a pan
- Add in the apples and let simmer for about 5 mins on medium-high, stir occasionally
- Add the rest of the ingredients to the pan and simmer on medium heat for 7-9 minutes, until apples are soft.
Putting together the Pop-Tarts:
- Cut dough into 3x4 inch rectangles, divide in half.
