    Are you ready for a green sweet treat? Baked Banana Donuts with Matcha Icing- super simple to make, full of flavor and great for St. Patrick's Day!

    Since it's St. Patrick's Day and I have a bit of a sweet tooth, I decided to indulge and enjoy some Baked Banana Matcha Donuts. Even though I eat pretty healthy most of the time, I definitely DESERVE to indulge after this week. Homemade baked donuts are my favorite. I remember these Cinnamon Donuts which were the first donut recipe I ever made. I was so excited when I bought my first donut pan, and to my surprise baked donuts are super easy to make. 

    Banana Matcha Donuts

    I flavored this particular batch of baked donuts with a Matcha Green Tea Icing. It gives these donuts a pretty bright green hue and makes them festive in celebration for St. Patrick's Day. Matcha powder comes in different grades-be sure to use ceremonial grade for the brightest color and cleanest flavor.

    Why You'll Love These Baked Banana Matcha Donuts

    These Baked Banana Matcha Donuts come together in about 20 minutes and taste delicious! No need for frying, they're baked in the oven and get a burst of color from the Matcha Green Tea Icing. When you make a batch of baked donuts, you're basically making tube-shaped muffins.

    Keep in mind - baked donuts do not taste like fried ones, they taste more like a cake but they're a lot easier to make, you just need a donut pan. Unlike conventional donuts that consist of fried dough and covered in sugary glaze, you can enjoy these Baked Banana Matcha Donuts without too much guilt and without sacrificing any deliciousness!

    Baked Banana Matcha Donuts

    Ingredients

    Banana Donuts

    • donut baking pan
    • 2 mashed bananas
    • 3 tablespoon sugar
    • 1 egg
    • ½ teaspoon vanilla extract
    • 2 tablespoon vegetable oil
    • ¾ cup All Purpose flour
    • ½ teaspoon baking powder
    • ½ teaspoon baking soda
    • ⅛ teaspoon ground cinnamon
    • ⅛ teaspoon salt

    Matcha glaze

    • 1 1/2 cups powdered sugar
    • 1 teaspoon Matcha green tea powder
    • 2-3 Tbsp. Hot water

    Instructions

    Banana Donuts

    • Preheat the oven to 350ºF.
    • Whisk together the mashed bananas, sugar, egg, vanilla, and vegetable oil.
    • In a separate bowl, mix together the flour, baking powder, baking soda, cinnamon and salt.
    • Fold the dry ingredients into the wet mixture and mix until batter forms.
    • Fill generously greased donut pan about ¾ full (I used a ziplock bag by cutting the corner of the bag and filling it with the batter and then squeezing it into donut pan)
    • Bake for 12-14 minutes and let cool in pan 5 minutes before moving to a wire rack.

    Matcha glaze

    • Mix together the powdered sugar, Matcha powder and hot water in a small bowl until smooth.
    • Look for a thick consistency. You can either add more powdered sugar or water to adjust it.
    • When the donuts are cooled, dip them into the glaze and place on a cooling rack, letting the excess drip on a baking sheet.
