    Baked Parmesan Zucchini Fries

    These Baked Parmesan Zucchini Fries are baked to perfection. They're a healthier option for an appetizer that is easy to prepare with only a few ingredients.

I love baking everything instead of frying because it's so much healthier and honestly, it tastes just as good if not better. With these delicious Baked Parmesan Zucchini Fries, helping yourself to a second plate is possible and you can enjoy every bite of these completely guilt-free.

    They're crispy, crunchy, addictive and surprisingly easy to make! These easy Baked Zucchini Fries dish can be pulled together in a matter of minutes. The zucchini cooks up nice and tender on the inside with a wonderfully flavorful, crunchy exterior thanks to the bread crumbs. Serve the Baked Zucchini Fries by themselves, with a spicy aioli or ketchup tastes just as delicious!

    How to make the Zucchini Fries:

    1. Pre-heat oven to 425F. Line a baking sheet with aluminum foil or parchment paper. Set aside.
    2. Combine 2 eggs in a small shallow bowl and set aside.
    3. Combine the breadcrumbs, parmesan cheese, garlic powder, salt and pepper in another bowl and set aside.
    4. Prepare zucchini by trimming the ends and cutting into 1/2 inch strips or slices.
    5. Dip zucchini strips into egg mixture then in the breadcrumb mixture and transfer to baking sheet.
    6. Repeat until all the zucchini fries are coated with egg and breadcrumbs.
    7. Bake in the preheated oven for 30 to 35 minutes, turning once, until golden and crisp.
    8. Enjoy hot with spicy aioli sauce, ketchup or your favorite dipping sauce!

    Tips For the Baked Zucchini Fries:

    • Make sure your zucchini are dry. Blot them with a paper towel before placing in the egg wash to make sure the egg sticks.
    • Get your assembly line in order first. Have the sliced zucchini on one side, then the egg wash, parmesan mix and parchment-lined baking tray on the other side.
    • Keep your hands in separate working stations. Use one hand for dipping the zucchini in the egg and one hand for coating the zucchini with the parmesan.
    • Flip the zucchini halfway through. Every oven cooks slightly different so keep an eye on them. Mine cook for about 30 minutes and I flip at 15 minutes.

    • 1-2 large zucchini
    • 1 cup Italian bread crumbs
    • 1/4 cup grated Parmesan cheese
