Making energy bites (also known as bliss balls) have become a staple in my kitchen. I make them almost every week during my meal prep as a snack to grab and go. Some weeks I just DO NOT feel like meal prepping. As much as I rave about meal prepping and how beneficial it is to staying on track for a healthy lifestyle, when it comes to meal prepping for the week, I love a fast and simple ingredient recipe.

These energy bites are high in fiber, protein, minerals and vitamins. The main ingredient in most of my energy bite recipes are Medjool dates. Medjool dates are bigger, softer and have a more caramel flavor than regular dates do. They’re pretty known as “nature’s candy.” The best thing about Medjool dates being a fruit is that they have quite a bit of natural sugar.

This 4 ingredient Caramel Almond Crunch Bite recipe is so simple and easy to make. They’re made from raw ingredients - Medjool dates, almonds, coconut and a pinch of salt, blended together and rolled into a convenient little ball. I keep them stored in an air tight container in the fridge for up to a week (if they get to last that long).

Caramel Almond Crunch Bites
Ingredients
- 1 cup pitted Medjool dates
- 1 cup sliced almonds
- 1/4 cup unsweetened shredded coconut extra for rolling
- 1/4 teaspoon salt
Instructions
- Add the Medjool dates, almonds, shredded coconut and salt to a food processor
- Pulse until it forms into a sticky dough.
- Roll into bite-sized balls, and then roll into a plate of shredded coconut
- Store in the fridge in an airtight container up to a week
