This recipe is quick and easy, and you most likely have all of the ingredients in your pantry right now. The best part, all you need is a bowl and a whisk, no mixer needed!
I seem to always end up buying more bananas for the week than I need. I hate to see fruit go to waste, so why not use them in a recipe.
There’s something about bananas when they start to turn brown, that’s always the BEST time to use them for baking. They become sweeter and easier to mash since they're already soft. The riper the banana, the better the muffins (or bread) will taste.
Muffins are fun, they make me feel like a kid again. Sometimes I’ll peel the bananas, freeze them and use them in an acai bowl or I also use them as a base for my “Nice” Cream (Ice Cream), but this time I decided to whip up some delicious Cinnamon Banana Breakfast Muffins.
*This recipe will also work great as a loaf, add about 10 extra minutes of baking time (will vary oven to oven)
Cinnamon Banana Breakfast Muffins
Ingredients
Banana Muffins
- 2/3 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2/3 cup mashed ripe bananas about 2 bananas
- 1 teaspoon vanilla extract
- 1 2/3 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
Muffin Topping
- 3 tablespoons butter melted
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Heat oven to 375 degrees.
- Spray bottoms only of 12 regular-size muffin cups with cooking spray.
- In medium bowl, combine the sugar, oil, eggs and stir with wire whisk.
- Add in bananas and vanilla, whisk until combined.
- Add in flour, baking soda, salt, and cinnamon and stir together until just combined.
- Divide batter evenly among muffin cups. Each muffin cup will be almost to the top. About 3/4 full.
- Bake 20 to 22 minutes or until toothpick inserted in center comes out clean and muffins are high and rounded on top.
- Immediately remove muffins from pan to cooling rack.
- Combine the sugar and cinnamon in a small bowl.
- Put melted butter in a separate small bowl.
- Dip muffin tops into melted butter and then into cinnamon-sugar.
- Serve warm.
