One of everyone's favorite dessert in a bite size form!
These Coconut Key Lime Energy Bites are zesty, perfect as a snack and ready in about 15 minutes.
I've made a lot of energy bites but I have to say I think these Coconut Key Lime Energy Bites are the best yet. I love key lime pie, especially in the spring-summer time. I've made a healthy and delicious version of Key Lime Pie Parfaits before but this was the first time that I’ve added zest into any of my energy bites, and oh my! I’m very glad that I did. It gives the energy bites a fresh, new taste that’s bursting with flavor.
What's in the Coconut Key Lime Energy Bites:
These energy Bites are naturally sweetened with dates, packed with healthy fats from cashews and Justin's Vanilla Almond Butter and they're the perfect snack to grab when the sweet craving hits. It’s completely optional but I also added some vanilla vegan protein powder to these energy bites for added nutrients.
They honestly taste just like a slice of key lime pie rolled up into a perfect bite-sized, coconut-crusted ball but still no-bake and so easy to make. Just eight ingredients, mix, roll, refrigerate, EAT. And maybe save a few for later in the week.

Coconut Key Lime Energy Bites
Ingredients
- 1/2 cup rolled oats
- 1/2 cup cashews
- 5 medjool dates pitted
- 1 tablespoon almond butter
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 1 lime zest and juice
- 1 scoop protein powder optional
- 1/4 cup desiccated coconut
Instructions
- Add oats to a food processor for about a minute until roughly broken down.
- Add dates and process again until the dates are finely chopped. I like to cut them into chunks before placing them in the processor to help them breakdown.
- Add all remaining ingredients.
- Process until just coming together. If the mixture looks a little crumbly add a dash of water or nut milk until it begins sticking together.
- Taking about a spoonful at a time, roll the mixture between your palms until smooth.
- Store in a sealed container in the fridge for up to a week.
