Happy Easter! Despite what you see here on HalfPastHungry, I am not the most creative person when it comes to cute holiday-themed desserts. I really have to dig deep and force myself to think out of the box, which usually can take weeks and sometimes even months for me to do. Sounds a-lot like my life in a nut shell. Always striving and forcing things in my own will instead of giving it over to God.
I've always known Christ, but as far as having a personal relationship, I can't say that I've always had one. For the past 4 years, I've come to know God personally, not only based on what a family member or a pastor tells me and I've seen God move in my life more than ever before. There's something about being vulnerable and letting God shape and mold you and move in your life in ways you could never imagine. You're his very masterpiece and he takes pride in every intricate part of who you are and who you're becoming. I've gone from relying on myself, to putting my trust in him more and more each day and I've watched my life radically transform day by day.
From being in the wrong relationships, to choosing to step away from friends for reasons that weren't clear to me at the time that were unhealthy relationships, to loosing people I thought "I needed" and relying on God alone. I'm not perfect by any means, but as I continue to walk with Christ daily, he is perfecting my every step. In this season, new friendships have formed and unknowingly I began to use my testimonies and past experiences to pour into their lives by being vulnerable and in return be able to help them through their trials. It all comes together in the end, everything works together for good.
"And we know that all things work together for good to those that love God, to those who are called according to his purpose", (Romans 8:28).
Now for these delicious Dirt Covered Carrot Pudding Cups. The concept is simple. When it comes to holidays, I don't know about you but I love to spend more time with family and of course eating then in the kitchen cooking. These Dirt Covered Carrot Pudding Cups are quick and so easy to make and all you need are some large fresh strawberries, white chocolate for melting and orange food coloring to dip your strawberries in, some instant chocolate pudding and Oreos. Just like a carrot getting pulled out of the ground, they’re sophisticated mini dirt cups from our childhood memories, minus the gummy worms.
Dirt Covered Carrot Pudding Cup
Ingredients
"Carrots"
- 1 lb Large Strawberries rinsed and dried
- White Chocolate for Melting
- Orange Food Coloring as needed
Dirt Cups
- 2 boxes 5.9 oz Instant Chocolate Jell-O Pudding
- 4 cups Skim or 2% Milk
- 1 package of Oreos
Instructions
"Carrots"
- Place the candy in a microwave-safe bowl and heat for 30 second intervals, mixing well between each interval, until completely smooth.
- Add a few drops of food coloring at a time, mixing in between until you reach the desired shade of orange.
- Dip each strawberry in the candy melts as far up as possible, leaving the green leaves uncovered.
- Place the dipped strawberry on the wax paper.
- Once they’re all dipped, use a spoon to drizzle more orange candy for a striped look.
- Transfer the strawberries to the fridge for 10 minutes to allow the chocolate to set completely.
Dirt Cups
- Follow the directions on the side of the Instant Chocolate Jell-O Pudding by whisking the milk and pudding mix together.
- Allow the pudding to set in the fridge for about 5 minutes.
- Separate the Oreo cookie from the cream filling, and place cookies in a Ziploc bag.
- Gently smash the Oreo cookies into crumb pieces.
- When the pudding is ready, add a layer of pudding the bottom of the cup.
- Sprinkle a thick layer of Oreo crumbs.
- Place a dipped strawberry in each cup, submerging the strawberry about a quarter of the way down.
- Store in the fridge until ready to serve.
