    What’s better than pumpkin spice and Halloween? How about pumpkin spiced Halloween donuts? This Halloween Monster Donuts recipe is easy to make and is ready in under 30 minutes! They’re pumpkin flavored and baked, not fried, and made with oat flour. Halloween recipes are one of the easiest holidays for making themed treats that everyone will love. These Monster Donuts would be perfect if you’re throwing a party.

    Are baked donuts healthier than fried? 

    Baked donuts can be healthier than fried donuts however it also depends on what ingredients are included in the donuts. Are they loaded with sugar and flour? Will they be topped with an icing? All of these factors come into play when determining the benefits of what you’re eating. No matter what we do to our favorite foods, there's still going to be a con. You just have to pick your battles and remember to enjoy in moderation.

    Ingredients in the Donuts:

    Pumpkin Donuts

    • Oat flour
    • Pumpkin puree
    • Coconut sugar
    • Butter, melted 
    • Pumpkin pie spice 
    • Salt 
    • Baking soda
    • Vanilla extract
    • Lemon juice

    Dark Chocolate Icing

    • Dark chocolate chips
    • Coconut Oil 

    How to make the Monster Donuts:

    These healthy pumpkin donuts are made with simple ingredients and come together quickly in one-bowl, it couldn’t be easier to make.

    To make the Halloween Monster Donuts:

    1. Combine wet and dry ingredients in one bowl
    2. Mix the ingredients together
    3. Fill the donut pan
    4. Bake
    5. Mix together the ingredients for the chocolate icing
    6. Dip the donuts in the icing
    7. Place the candy eyeballs on top

    Donut Recipe Tricks and Treats:

    • Use 100% pure pumpkin puree. Not pumpkin pie filling!
    • Instead of buying oat flour, you can simply make it by using 1 cup of rolled oats and pulsing it in a blender until the oats will resemble a flour-like texture.
    • An easy and clean way to evenly divide the batter in the donut pan is to add the batter to a large plastic bag, cut off the tip, then pipe the batter into the donut pan filling only about halfway.

    Halloween Monster Donuts

    • Donut baking pan

    Ingredients

    • Candy eyeballs

    Pumpkin Donuts

    • 3/4 cup oat flour
    • 1/2 cup pumpkin puree
    • 1/2 cup coconut sugar
    • 1/4 cup butter melted
    • 2 teaspoons pumpkin pie spice
    • 1/8 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon vanilla extract
    • 2 tablespoons lemon juice

    Dark Chocolate Icing

    • 1 cup chocolate chips
    • 2 tablespoons coconut oil

    Instructions

    • Preheat the oven to 350ºF and grease a donut pan with butter or organic cooking spray.
    • In a large mixing bowl, combine the oat flour, pumpkin puree, coconut sugar, butter, pumpkin pie spice, salt, baking soda, vanilla, and lemon juice and stir until combined.
    • Using a large plastic bag, add the batter to the bag, cut off the tip, then pipe the batter into the donut pan filling only about halfway. Divide the batter evenly among the 6 donut trays and bake them for about 20 minutes or until golden brown.
    • Remove the donuts from the oven, and let them cool for 5 minutes in the pan. Then you can use a knife to gently remove them out of each tray.
    • Next, combine the ingredients for the dark chocolate icing in a small microwavable bowl. Place the bowl in the microwave at 30 second intervals. Stir the chocolate in between each 30 seconds intervals so all of the chips are just about melted. Continue to stir until the last remaining pieces have melted.
    • Gently flip the top side of the donuts into the melted chocolate to coat the tops of each and place them on a plate. Before the chocolate hardens, place your candy eyeballs onto the donuts wherever you’d like.
    • Continue this process until all of the donuts are complete. Be sure to stir the melted chocolate between each doughnut so it doesn’t harden. Allow the donuts to sit for 10 - 15 minutes for the chocolate to harden.
    • The donuts can be stored in the fridge for up to 4 days for maximum freshness.
