Raise your hand if you love peanut butter? I am obsessed with peanut butter and I probably have some if not every single day. These Homemade Nutter Butter Cookies are a peanut butter lovers dream! And let me just say, I’m still drooling over them. It’s such a simple recipe, with simple ingredients, and I feel absolutely no guilt eating more than one.

Homemade Nutter Butter Cookies
Ingredients
Cookies
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1 teaspoons vanilla extract
- 2/3 cup almond flour
- 1/2 teaspoon baking powder
Filling
- 1/4 cup peanut butter
- 1 tablespoons maple syrup
Instructions
- Preheat oven to 350 F.
- Mix together peanut butter, maple syrup and vanilla until combined.
- Fold in the almond flour, and baking powder.
- Roll about 1/2 tablespoon sized balls and place two of them side-by-side on a parchment covered baking sheet.
- Using the back of a fork, press down on top of one ball about half way through, then rotate 90 degrees and press down again.
- Continue this process on the rest of the dough.
- Bake cookies for 12-14 minutes.
- While they’re baking, whip up the filling by mixing together peanut butter and maple syrup.
- Once the cookies are completely cooled (about 10 minutes) carefully spread the filling in between the cookies and press together.
