Key Lime Pie Parfaits, easy to make and so delicious the first bite will mentally transport you to the Florida Keys.
The days are getting longer and the weather’s getting warmer (at least here in Florida). Personally, I love the cooler weather, especially during the holidays. But there's nothing like Spring when you get to break out your bikini and hit the beach with a drink (or two, but who's counting) and start getting a warm golden glow on your skin from sun. It just feels so good. I'm truly grateful to live in Florida. Even if the humidity makes my hair frizz and you can never predict the weather so you need to carry an umbrella 80% of the time. I mean think about it.. people fly from all over to come and vacation right here, in my backyard. I definitely feel I take where I live for granted. On any given day I can roll out of bed, throw on a swim suit, grab a towel and be on the beach in a 30 minute drive, max.
In Florida, I feel like we only have two seasons, hot or nice weather... a.k.a. Summer and "Winter". So in the midst of the seasons changing, I decided to make some Key Lime Pie Parfaits that are so incredibly easy to make and have the perfect key lime flavor – not too strong, but plenty key lime-y and healthy! So healthy you could even eat one for breakfast if you want! And I'm NEVER against dessert for breakfast. The Chobani Key Lime Greek Yogurt and half an avocado make it smooth and extra creamy, the juice and zest from two limes give it just the right amount of pucker while the vanilla extract and the banana gives these parfaits just the right amount of sweetness. It’s a healthy parfait packed with “Key” nutrients.

Key Lime Pie Parfait
Ingredients
- 1/2 cup Chobani Key Lime Greek Yogurt
- 1/2 of a Ripe Avocado
- Juice & Zest from 2 Limes
- 1 tablespoon Vanilla Extract
- 1 Banana Peeled, Sliced & Frozen
- 1 Package of Crushed Graham Crackers
Instructions
- Place ingredients Greek Yogurt through Banana in a blender and process until smooth.
- Place Graham Crackers inside of a Ziplock Bag and gentle break them into crumbles. (I liked to leave a few small pieces that gave me a crunch with every bite)
- Create the first layer with Graham crackers, then Key Lime Mixture and alternate until dish is filled, ending with Key Lime Mixture on top.
- Top with Zest from a Lime.
- Enjoy right away or refrigerate until ready to serve.
- *Feel free to adjust the lime juice as needed. Try it with one lime first and add more as desired.*
