- Fresh apples - I used Honeycrisp apples for this recipe. about 2 cups of roughly chopped apples, about 2 large apples.
- Butter - vegan butter can also be used as a substitute
- Fall spices - cinnamon and apple pie spice
- Brown sugar - or you can use coconut sugar as an alternative
What are the Best Apples to Use?
This depends on your preference. Some apples are sweet while other apples are tart. If you like sweet apple pies, Gala apples, Pink Lady or Honeycrisp apples are a good choice. If you prefer a tart apple pie, using Granny Smith apples is the better option. But feel free to use any kind of apple for this recipe or use what you have on hand.
How to Make Mini Pies in Muffin Tins
Instead of using store-bought pie crust to make these pies, I decided to make an almond flour crust. The filling is a healthier filling than using the can apple pie. It's just a simple mixture of chopped apples, butter, brown sugar and apple pie spice. Then top the almond flour crust with the apples and bake it.
To Make the Almond Flour Crust
- In a large mixing bowl, mix the almond flour, baking powder, cinnamon, and salt with a whisk.
- In a small mixing bowl, combine egg, honey and the melted butter.
- Add wet ingredients to the almond flour mixture and stir till combined then let the dough rest for about 5 minutes.
- Press 1-2 tablespoon dough into the mini muffin tin, being sure you create a large dent in the middle.
- Bake for 10-12 minutes or until golden brown.
To Make the Homemade Apple Pie Filling
- Heat a small saucepan with the butter.
- Stir in apples, brown sugar and apple pie spice.
- Let it cook for 4-5 minutes or until just softened. Remove from heat.
- Divide the apple filling among the almond flour crust cups.
- Top with whipped cream, ice cream or enjoy as is!
