There's no need to turn on your oven when making this easy, no bake cheesecake that’s a perfect dessert to share at all of the summer parties and picnics.
When the weather gets warm, I love to make desserts that are quick and easy, like these Berry Refreshing Popsicles. There's just certain days during the summer when the last place anyone wants to be is in a hot kitchen. I mean really, who wants to turn on the oven when it’s already hot in your house?
What's in the No Bake Cheesecake
This is a classic creamy cheesecake with a graham cracker crust, that’s oven free! Of course making everything from scratch taste better and is better for you. You can make your own graham cracker crust or opt to buy a pre-made one. Either way it still taste delicious! The filling has just 3 main ingredients (cream cheese, powdered sugar and heavy whipping cream), with a little lemon and vanilla for extra flavor. The filling is blended together in an electric mixer and poured into the crust. Refrigerate the cheesecake for 4 hours (or overnight), and it’s ready to eat! It’s perfectly quick and simple.
The combination of the juicy, sweet berries and cream cheese icing is absolutely delicious. You’ll definitely be going back for seconds, maybe even thirds!

No Bake Cheesecake
Ingredients
- 24 ounces 3 packages cream cheese, softened
- 3/4 cup powdered sugar
- 2 cups heavy whipping cream
- 1 tablespoon freshly squeezed lemon juice
- 1 1/2 teaspoons vanilla extract
Instructions
- In a large bowl, use an electric mixer to combine the cream cheese and powdered sugar. Beat until smooth.
- Add the cream slowly, while continuing to beat. When all the cream has been added, scrape the bottom and sides of the bowl with a rubber spatula, and then stir in the lemon juice and vanilla.
- Transfer the cheesecake filling to the prepared pan, and smooth into an even layer.
- Refrigerate for 4 hours or overnight before slicing and serving
