This Pina Colada Mocktail is an easy non-alcohol cocktail recipe that's creamy, sweet and bursting with tropical coconut and pineapple flavor. Made in less than 5 minutes, it's ready to be served at any summer party, BBQ or for any special occasion.

This Pina Colada Mocktail is made with all of the flavors of a classic piña colada, except without a hangover. It’s creamy, with pineapple and coconut flavors, just the way it should be. Could you ask for anything better?
While a traditional pina colada is made with rum, for this classic cocktail, I omitted the rum and instead used rum extract. This pina colada mocktail recipe is so delicious and easy to make at home. It also makes a great alternative for those who may prefer to have non-alcoholic drinks or cannot consume alcohol for health or personal reasons.
The easy mocktail is made with only 4 ingredients and makes two virgin pina coladas, but you can easily double (or triple) the recipe to make drinks for a crowd. It’s the perfect drink for hot summer days by the pool, for parties, barbecues or any special occasion.
What is a Mocktail?
A mocktail is essentially a non-alcoholic drink. Pina coladas are the national drink of Puerto Rico and they were invented in the 1950s. The original drink that was created didn’t contain any alcohol. Later rum was then added to the drink and named as what we now know as the pina colada cocktail.
They’re great for anyone who chooses not to consume alcohol or for those who simply want to enjoy a refreshing and tasty beverage without the effects of alcohol. They come in a variety of flavors and can be served in a variety of settings, such as parties, restaurants, and bars. Popular drinks include virgin margaritas on the rocks, Shirley Temples, and fruit punches.
This virgin piña colada recipe includes fresh pineapple juice, cream of coconut, frozen pineapple and a little rum extract. This drink is a twist on a classic pina colada recipe, you won’t even miss the alcohol.

Equipment You’ll Need
- High Speed Blender - this is the blender I used to make this delicious non alcoholic pina colada drink. If you don’t have a high-speed blender, you can also use a compact blender to make this recipe.
- Glassware - Pina Coladas are typically served in a hurricane glass but any tall glass will work.
- Straws - I prefer to use a straw to drink a pina colada drink, especially if you have garnishes on the rim of the glass. It just makes it so much easier to drink.
Ingredients You’ll Need
This recipe has 4 simple ingredients that can be found easily at grocery stores. Here’s what you’ll need:
- Pineapple juice - using 100% real pineapple juice is the best. I used canned juice but freshly squeezed or bottled juice works as well.
- Cream of coconut - it’s creamy, sweet and thick, making it perfect for this frozen drink. Coco lopez cream of coconut is used in this pina colada recipe. I don't recommend using coconut milk, since it’s more liquidy and not the same amount as adding the creamy coconut. Condensed milk will also work however you will miss out on the coconut taste.
- Frozen pineapple chunks - great for convenience and can be found in the frozen section of your grocery store. You could also slice fresh fruit into medium sized chunks and freeze them overnight in a ziploc bag or freezer friendly container.
- Rum extract - to help give the drink the taste of having rum without the alcohol.
- Ice cubes - (optional) for thicker pina coladas. Helps give the perfect slushy consistency.
- Garnishes - pineapple wedge, pineapple leaves, cocktail umbrella and coconut shreds are great to top the drink with. Some drinks are also topped with a maraschino cherry, however the ingredients in the jar of cherries contain Red 40 which is a synthetic food dye.
How to Make a Pina Colada Mocktail
- Blend. Place the frozen pineapple chunks, pineapple juice, coconut cream and rum extract into a blender and blend until smooth.
- Add Ice. If you decide you like your pina colada a little bit thicker, you add in about ½ cup of ice at time and blend until smooth.
- Serve. Pour the drink into a glass and garnish with a pineapple wedge, pineapple leaves and/or coconut shreds.
Tips for Making the Virgin Cocktail
Here are some helpful tips below to help you make the perfect virgin pina colada:
- If it’s too thin? Add a 1/4 cup more of frozen pineapple chunks (or ice).
- If it’s too thick? Add about 2 tablespoons more of pineapple juice.
- Need a sweetener? Add 1 tablespoon more of the coconut cream.
- Need rum flavor? Add 1 teaspoon more of the rum extract at a time until you reach your desired flavor.
Is It a Thyroid-Friendly Recipe? Pineapple is loaded with Vitamin C, which is beneficial for the thyroid. It strengthens your immune system, boosts your energy levels and it also has anti-inflammatory properties.
Recipe FAQ
This frozen pina colada tastes best when served right away since it has a slushy consistency. It does not store well in the refrigerator or freezer for long periods.
This virgin pina colada recipe consists of pineapple juice, cream of coconut, frozen pineapple chunks, and rum extract that has been blended in a high speed blender and then poured into a glass and garnished with a pineapple wedge and pineapple leaf.
Yes. A classic Pina Colada has rum. White rum, dark rum or coconut rum will work well. I’d start by adding about 1.5 ounces of rum at a time. Also note that adding rum may loosen the consistency of the drink and you may want to add more pineapple chunks or ice.
Coconut cream has the same delicious coconut flavor that coconut milk has except it is much thicker than coconut milk since essentially it is coconut milk with less water. Coco lopez was used in this pina colada recipe.
Coconut cream is better because of its rich and creamy consistency and adds extra sweetness to the drink; however , if you prefer coconut milk it will work as well. Please note, coconut milk has a looser consistency than coconut cream.
