These pumpkin pie bliss balls are a quick and easy, no baking necessary snack with simple pantry ingredients that you’ll almost always have on hand. Energy bites can be a combination of dried fruit, nut butter, seeds, and other ingredients that offer a densely nutritious snack in a little ball. Each bite is loaded with fiber, antioxidants, and nutrients. Just like my carrot cake bliss balls. they’re the perfect treat when you’re craving something sugary at the end of any meal or for the perfect snack.

- Spatula - to help scrape the ingredients from the sides of the food processor.

Ingredients You’ll Need
These energy bites are made with just a few simple ingredients that you likely already have in your pantry:
- Dates - they are best to use when they are soft at room temperature. I like to chop the dates before putting them into the food processor to make it easier to blend.
- Almond flour - I like using Bob’s Red Mill super fine almond flour for most of my recipes.
- Sunflower seeds - excellent sources of nutrients including vitamin E and selenium
- Pumpkin puree - be sure to use real pumpkin puree, not pumpkin pie mix. You’ll only need ½ cup of pumpkin puree.
- Vanilla extract - use pure vanilla extract, not imitation vanilla, for the best taste.
- Spices - ground cinnamon, ground ginger, ground nutmeg are all great warm fall spices to use to help enhance the flavors. You could also use equal parts of pumpkin pie spice as a substitute.
- Sea salt - just a pinch!
How to Make the Pumpkin Pie Balls
They’re made entirely in the food processor, which is awesome because this means they’re quick and easy to make with little clean up.
- Combine the ingredients. Place the dates, almond flour, sunflower seeds, pumpkin puree, ground cinnamon, ground ginger, ground nutmeg, vanilla extract and sea salt into a food processor, blend until all of the ingredients are combined and smooth. You may need to use a spatula to scrape down the sides while blending.
- Chill in the fridge. Once the ingredients are blended together in the food processor, I recommend putting the mixture in the refrigerator for 5-10 minutes, or until firm, to make the dough easier to work with when shaping them into balls.
- Roll and Form. When the mixture is chilled, remove it from the fridge. Roll into small to medium sized balls. I prefer to use a small cookie scoop to get the best size. You can eat them fresh or store to eat throughout the week.
How to Store the Bliss Balls
If you have any leftovers, these pumpkin bites are best kept chilled until ready to eat or you can freeze them for later.
- To store - place the little bites in an air–tight container in the refrigerator when they are not being eaten. They remain fresh for up to a week.
- To freeze - place them in an air-tight freezer friendly container and store them for up to six months. When you’re ready to eat them let them soften at room temperature so they’re easier to eat.

If you find your pumpkin pie balls aren't sticking together well when rolled, let them chill in the fridge for 20 minutes and try again.
It’s best to store them in an airtight container. They can also be stored in a large ziploc bag, just be careful when placing them in the fridge. Lay them flat in an area they won’t get smashed.
