When I saw all of the Tik-Tok baked oats recipes trending, I knew I had to make a Pumpkin version. Blended oatmeal has an incredible cake-like texture that everyone will love, and it’s easy to customize and change this recipe so you never get bored.
During the fall, If I'm not eating a slice of pumpkin bread, I love to make pumpkin overnight oats as a quick and easy breakfast meal prep. You’re going to love this Pumpkin Baked Oatmeal recipe, especially during the fall. It’s cozy, filling, and pumpkin-y and it takes less than 10 minutes to prep. Even if you think you don’t like oatmeal, this fall breakfast recipe is worth trying.
What are Vegan Baked Oats?
The Tik-Tok baked oats craze brought a whole new meaning to breakfast. Baked pumpkin pie oatmeal looks and tastes like cake but it's healthy.
Baked oatmeal is just oats that have been baked into a cake-like mixture. It’s basically like having cake for breakfast. It’s an easy blender recipe with ingredients including oatmeal, maple syrup, milk, and a few other ingredients you will find in your pantry. The oats are blended into oat flour and then mixed together with the remaining ingredients until smooth and baked.
It’s best made when baked in small ramekins, however any small heat safe dish will work.
What Kind of Oats to Use
Old fashioned rolled oats work best for baked oatmeal recipes. Using old fashioned rolled oats provides the perfect balance for providing good texture and is quick for baking. Quick oats will also work well since you will be blending the oats in a blender before baking it.
Ingredients You’ll Need
The base of this recipe uses rolled oats along with other fall favorite ingredients that create the best Pumpkin Baked Oatmeal recipe.
- Rolled oats: This is the base for the recipe. You can use old fashion rolled oats, quick oats, or even just buy oat flour
- Pumpkin Puree: Be sure to use puree, not pumpkin pie filling
- Pure Maple Syrup: One of my favorite natural sweeteners. It adds a touch of sweetness to oats without the chemicals and preservatives
- Vanilla: Adds a rich flavor to the dish
- Pumpkin Pie Spice: Adds more pumpkin flavor to the oats
- Cinnamon: To add a sweet and woody fall flavor
- Baking Powder: This helps the baked oats rise while baking
- Salt: To round out the flavor
- Almond Milk: Unsweetened Almond milk is my go-to plant based milk
- Chocolate Chips: Chocolate chips are the best with almost Anything!
- Coconut Whipped Cream: One of the best whipped creams if desired. I topped mine with a Coconut Whipped Cream.
How to Make the Single Serving Baked Oatmeal
- Preheat the oven to 350 degrees F.
- Place the rolled oats into the blender and pulse until finely blended like oat flour.
- Pour the oats into a ramekin or a heat safe dish for baking and mix in the pumpkin puree, maple syrup, vanilla, pumpkin pie spice, cinnamon, baking powder, salt and almond milk until everything is combined.
- Stir into the batter the chocolate chips or desired add-ons.
- Place the dish onto a baking tray and place in the center of the oven. Bake for about 15-20 minutes or until golden brown and center comes out clean with a toothpick.
- Remove from the oven and apply toppings if desired. I topped mine with a Coconut Whipped Cream.
How to Serve Pumpkin Baked Oats
You can drizzle some maple syrup over top or whipped cream. You can also enjoy it with some nuts like chopped pecans, walnuts or almonds. For a more dessert-like taste you can also add some chocolate chips to the batter before baking it or add it on top.
Baked Oatmeal Substitutions
If you don’t have an ingredient or simply want to swap out an ingredient in the recipe, here are some simple swaps that you can use:
- Rolled oats: quick oats, oat flour
- Almond milk: any plant based milk
- Maple syrup: molasses or honey
- Coconut Whipped Cream: almond whipped cream or a dairy free option or regular whipped cream if you prefer.
