These Vegetarian Black Bean Taquitos are quick, easy and make the perfect appetizer or main dish for your next Taco Tuesday! With 5 simple ingredients, they’ll be ready to eat in no time. They’re easy to assemble and you can add your favorite toppings to make them customizable. You can eat them alone or combine them with other appetizers for parties or get togethers.
What are Taquitos?
Taquitos are more or less rolled up tacos. They’re traditionally filled with chicken, beef and/or cheese; however, I used vegetarian refried black beans, dairy-free cheese and sweet corn to make a vegetarian version. Taquitos are typically fried, but baked taquitos help keep this dish healthier.
Ingredients You'll Need
- Homemade Taco Seasoning - I usually make my own seasonings. I’ve included the taco seasoning recipe below, but feel free to buy your favorite taco seasoning.
- Vegetarian Refried Beans- Be sure to get vegetarian or fat-free refried beans, as traditional refried beans are often made with lard. I used Siete Vegan Refried Black Beans.
- Corn - frozen or canned corn works well for this recipe.
- Fresh Corn Tortillas - a Taquito is different from a flauta, taquitos are made with corn tortillas and flautas are made with flour tortillas. Feel free to use flour tortillas if you prefer. When purchasing corn tortillas, make sure they are fresh.
- Dairy-free Cheddar Cheese - I try to limit how much dairy I eat, however if you choose regular cheese, it works just fine.
- Taquito Toppings - Salsa, guacamole, dairy- free sour cream, cilantro, jalapeños. You can never go wrong with whatever toppings you choose.
How to make the Vegetarian Black Bean Taquitos:
- Combine the taco seasoning, refried beans and corn.
- Wrap 1 corn tortilla in a wet paper towel and microwave (1 at a time) in the microwave on high 25 seconds. (If making the taquitos with flour tortillas, skip this step)
- Scoop about 1 ½ - 2 tablespoons of the mixture into the tortilla.
- Top with a sprinkle of the dairy-free cheese.
- Gently roll the tortilla onto a parchment covered baking sheet with the seam side facing down. It helps if you can keep them rolled tightly.
- Brush with olive oil and complete this process until all of the tortillas are rolled.
- Bake uncovered for 25-30 minutes, until the edges begin to brown.
- Serve with your favorite toppings and dips.
Recipe Tips
- Be sure to get vegetarian or fat-free refried beans, as traditional refried beans are often made with lard.
- To keep this Taquito recipe gluten-free, use corn tortillas instead of flour tortillas.
- Don’t over fill the tortillas or they won’t roll and stay closed.
- The tortillas will roll a lot easier if they are fresh. To help the tortillas roll better and not crack, get two damp paper towels and place one tortilla at a time in between the paper towels. Place in the microwave on high for 25 seconds. Remove from the microwave, add ingredients and roll up the Taquito.

Ingredients
Homemade Taco Seasoning
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground oregano
- 1/4 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon Himalayan salt
Taquito Ingredients
- 2 tablespoon taco seasoning
- 1 15 ounce vegetarian refried black beans
- 1/2 cup sweet corn 1 small 8.75 oz can
- 12 fresh corn tortillas or flour if you prefer
- 1 cup dairy-free cheddar cheese shredded
- Toppings: salsa, guacamole, dairy- free sour cream, cilantro, jalapeños etc.

- Combine the taco seasoning, refried beans and corn.
