It’s also the best to enjoy during the hot summer months when watermelon season is at its peak since there's plenty of sweet watermelon available! This refreshing Watermelon Cucumber Feta Salad is summer in a bowl! It makes the perfect side dish for summer BBQ’s, picnics, and pool parties! I love shopping for fresh produce when it’s in season. There’s many fresh summer produce you can use to make simple salads such as berries, grapes, cherries and of course watermelons. - Watermelon: seedless is the best
- Cucumber: I like to use english cucumber
- Red onion
- Feta cheese
- Fresh mint leaves
- Lime juice
- Chili Lime Seasoning
Step-By-Step Instructions
- Add the diced watermelon, cucumber, red onion, mint leaves and lime juice to a large mixing bowl.
- Toss everything together until well combined. Refrigerate the watermelon salad until you are ready to serve.
- When you are ready to serve, add the feta cheese and the chili lime seasoning, toss gently and serve.
Storage Tips
This salad is best the day it is made, but will be fine for several hours. I like to serve it chilled, but it’s good at room temperature too.
If you want to make the salad in advance, you can cut up the watermelon red onion and cucumber, but keep them in separate containers in the fridge so they don’t get mushy. When ready to enjoy, combine everything in your large bowl and add in the feta, mint, lime and chili lime seasoning and enjoy!
