There’s nothing more comforting than a bowl of this Vegan Southern Baked Mac and Cheese. This dairy-free mac and cheese is baked to perfection with a crispy and buttery breadcrumb topping. It’s a healthier and lighter version and so easy to make.

INGREDIENTS

Macaroni  Cashews Coconut Milk Potato Carrots Nutritional Yeast Onion Garlic Vegetable Broth Spices Vegan Butter  Panko Breadcrumbs

Cheese Sauce Ingredients

Step 1

Place the cashews, coconut milk, potato, carrots, onion, garlic, nutritional yeast, smoked paprika, sea salt, ground black pepper and vegetable broth in a high-powered blender.

Make the Cheese Sauce

Step 2

Blend together the ingredients for the vegan cheese sauce until smooth and creamy.

Combine Ingredients

Step 3

Add the macaroni and the vegan cheese sauce into a casserole dish. Stir together until the cheese sauce is evenly distributed.

Bake the Mac and Cheese

Step 4

Add the panko breadcrumbs over the top of the mac and cheese and bake in the oven until the topping is golden brown.
