This easy vegan mashed cauliflower recipe is the best you'll ever taste. It's buttery, creamy and makes the perfect low carb, low calorie, dairy free side dish great for any occasion or holiday.

Cook the Cauliflower

Step 1

- Cut and boil the cauliflower in the vegetable broth for 10 - 15 minutes. - Drain the cauliflower and let it cool to help get rid of any excess moisture.

Process the Ingredients

Step 2

- Add the cauliflower and the remaining ingredients into a food processor and puree until smooth. - Taste and adjust the seasonings if needed.

Serve the Cauliflower Mash

Step 3

- Transfer the mashed cauliflower to a serving bowl. - Garnish with the parsley if desired and serve.
