Sweet Potato Pies

A delicious and easy way to enjoy a classic Sweet Potato Pie in a bite sized form. These Mini Sweet Potato Pies are a great dessert for a Thanksgiving, Christmas or holiday parties!

INGREDIENTS

Sweet Potatoes Sugar Vanilla Extract Ground Cinnamon Ground Nutmeg Eggs Evaporated Milk Butter Organic Pie Crust  Whipped Cream

Make the Pie Crust

Step 1

- Roll out the pie crust and use a 2" round cookie cutter to cut out the mini pie crust.  - Gently press each pie shell into each muffin cup.

Mash the Sweet Potatoes

Step 2

- Mash the potatoes, then place them in an electric mixer.  - Whisk until the potatoes are smooth, stopping to remove any strings.

Mix the Ingredients

Step 3

- Combine the whisked potatoes with the cinnamon, nutmeg, sugar and vanilla and stir until combined. Then, add in the whisked eggs and stir until it's creamy and smooth.

Fill and Bake

Step 4

- Pour the mixture into the prepared pie crust. - Bake for 20 minutes or until the center is set.
