These are the best oatmeal chocolate chip cookies without brown sugar. They’re a classic oatmeal cookie that’s soft and chewy and baked in less than 15 minutes. They use gluten free rolled oats and sweetened with coconut sugar.

Step 1
In a medium bowl, combine the rolled oats, gluten free flour, salt, baking soda, and ground cinnamon and set aside.
Step 2
- Beat the butter, coconut sugar and cane sugar, then add the egg and vanilla extract. - Slowly mix in the dry ingredients.
Step 3
Fold the chocolate chips into the batter until evenly distributed. Careful not to overmix the batter.
Step 4
- Scoop the cookie dough onto the preparerd baking sheet. - Bake for 8-10 minutes then allow them to cool on pan for 1-2 minutes
