Why You’ll Love This Salad
From the sweetness of the pomegranate seeds, to the crunchiness of the walnuts and tart feta, this winter pomegranate salad has everything you’ll love.
This feta pomegranate salad is perfect for winter. It’s filled with walnuts, avocado, pomegranate seeds and feta. Then, it’s all tossed together in my favorite winter salad dressing, a pomegranate vinaigrette.
When are Pomegranates in Season?
Since pomegranates are in season in the fall and winter, you’ll be able to find pomegranates in your grocery store or at a local farmers market . This salad is great to make for the holidays like Thanksgiving or Christmas.
The pomegranate vinaigrette is the perfect sweet and tangy compliment for this salad. You can always buy a store bought vinaigrette to save time, but honestly, nothing compares to a homemade dressing without artificial preservatives and it’s so simple and easy to make.
Equipment You’ll Need
Here are some helpful kitchen tools to make this Pomegranate winter salad:
- Large Mixing Bowl to toss the ingredients in
- Salad Tongs to serve the salad
- Whisk to mix the pomegranate vinaigrette
- Small Jar to store the pomegranate salad dressing
Ingredients You’ll Need
- Spring mix - any spring mix or baby green salads mix would go perfectly in this salad. You can also use different greens and turn this into a kale pomegranate salad, arugula pomegranate salad or spinach pomegranate salad.
- Walnuts- use halved walnuts, these add a nice crunch and texture to the salad. Pecans would also go great. You can also substitute with sliced almonds or leave them out if needed.
- Feta - I made the pear salad with feta cheese however a creamy goat cheese would go great as well. If you wish to make this salad dairy-free opt for a vegan feta cheese.
- Pomegranate seeds - the sweetness you get from the pomegranate seeds makes them a great addition to this salad with their chewy texture and sweet flavor. Don’t like pomegranate seeds? Make a cranberry feta salad with dried cranberries or you can also try some golden raisins.
- Avocado - Use the best quality avocados that are nice, ripe and firm to the touch. Avoid a soft and mushy avocado.
- Pomegranate salad dressing - this vinaigrette uses POM wonderful pomegranate juice, red wine vinegar, extra virgin olive oil, lemon juice, coconut sugar, salt and fresh cracked black pepper.
- More toppings to add - red onion or shallots are a great addition.
How to Make the Winter Pomegranate Feta Salad
- Add all of the ingredients for the vinaigrette into a small bowl and whisk together until well combined.
- Layer the spring mix with all the salad toppings (walnuts, feta, red onion, pomegranate seeds and avocado).
- Drizzle with the salad dressing, toss and serve.
How to Serve the Pomegranate Salad for a Crowd
- This feta pomegranate salad can be served a few different ways: on a platter, or as a single serving on a plate. Here are some ways to serve it for a large family or gathering:
- Double the ingredients if you’re serving for a large crowd.
- Serve in a large salad bowl for easy sharing.
- Serve individually plated. Make individual plates and drizzle the dressing on each one.
You Can Make This for Salad Meal Prep
If you want to make this salad for a weekly meal prep you can store the ingredients in different containers. Place the spring mix, walnuts and feta in an airtight meal prep container. Store the pomegranate seeds, avocado and dressing in different containers to help keep the ingredients fresh and avoid the spring mix from becoming soggy.
Recipe FAQ:
I prefer to buy the pomegranate seeds de-seeded from the pomegranate for ease whenever I want to make the salad. If you prefer to buy a whole pomegranate and remove the seeds you can do that as well and store the seeds in an airtight container.
Maybe you decided to make this salad when pomegranates are not in season or you’re simply just having trouble finding them, you could substitute the pomegranate seeds with dried cranberries or golden raisins.
You can use Tofu as a cheese alternative and make a great vegan substitute for feta cheese. Many brands also offer vegan feta cheese that you can buy from your local grocery store.
You can make the vinaigrette ahead of time but I recommend making the salad the same day that you plan on eating it.
If you slice the pears and apples too soon, they will turn brown. You’ll want to add the dressing to the salad just before serving so the spring mix doesn't get soggy. The dressing will keep well in the fridge for about 3 weeks.
