Chai Spiced Vegan Oatmeal Bars

These Chai Spiced Vegan Oatmeal Bars are made with just a handful of ingredients and ready in 20 minutes. They’re a great homemade treat, breakfast or on the go snack.

Instructions

  • Preheat the oven 350 degrees F.
  • In a small bowl, whisk together flax eggs and set aside to let it rest for about 5 minutes.
  • In a larger bowl, combine the oat flour, almond flour, coconut sugar, baking soda, cinnamon, ginger, all spice, cloves, nutmeg and cardamom in a large bowl and set aside.
  • In the small bowl with the flax egg add the maple syrup, coconut oil and vanilla and whisk to combine.
  • Fold the wet and dry ingredients together using a spatula, then transfer to a parchment-lined baking dish.
  • Bake for about 15 - 18 minutes or until the edges are set.
  • Remove from the oven, then wait until the bars cool before cutting them.
  • These bars can be sliced into 9 larger breakfast sized bars or 12 smaller snack bars.
  • Optional: drizzle glaze overtop.
