Halloween Oreo Brookie Bars

You’re in for a three layer treat with these Halloween Oreo Brookie Bars. They have a soft and chewy chocolate chip cookie base, a layer of Oreo cookies in the middle and fudgy brownie on top!

Ingredients

  • 12 Oreos

Almond Flour Cookie Dough

Almond Flour Brownies

  • 1 cup almond flour
  • 1 cup white sugar
  • 1/2 cup cacao powder
  • 2 large eggs at room temperature
  • 2 tablespoons butter salted
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt

Instructions

Almond Flour Cookie Dough

  • Preheat oven to 350°F
  • Cream together the butter and sugars in a large mixing bowl with an electric handheld or stand mixer.
  • Mix in the egg and vanilla. Stop and scrape down the sides of the bowl as needed.
  • In another small bowl whisk together the almond flour, baking soda and salt until combined. Add the dry ingredients to the sugar mixture and mix in on a low speed until a dough forms.
  • Stir in the chocolate chips with a spoon or rubber spatula.
  • Set aside

Almond Flour Brownies

  • In a large bowl, combine the almond flour, coconut sugar, cacao, eggs, oil, baking soda, vanilla, and salt, and stir well to form a thick batter. It will be much thicker and stickier than a traditional brownie batter, so be sure to mix well and break up any lumps.
  • Set aside

Assembling the Brookie

  • Make sure your oven is Preheated to 350°F.
  • Prepare a “8x8” pan with cooking spray
  • Press the cookie dough into the bottom of the prepared pan.
  • Top evenly with Oreos.
  • Spread brownie batter over the top of the Oreos in the prepared pan.
  • Bake for 35-45 minutes until the top looks done and the center is no longer jiggly. Test with a toothpick or knife.
  • Remove from the oven and let the brookies cool completely in the pan and then cut into squares and serve.
  • Store bars in an airtight container.
