Coconut Key Lime Energy Bites

One of everyone's favorite dessert in a bite size form! These Coconut Key Lime Energy Bites are zesty, perfect as a snack and ready in about 15 minutes.

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup cashews
  • 5 medjool dates pitted
  • 1 tablespoon almond butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 lime zest and juice
  • 1 scoop protein powder optional
  • 1/4 cup desiccated coconut

Instructions

  • Add oats to a food processor for about a minute until roughly broken down.
  • Add dates and process again until the dates are finely chopped. I like to cut them into chunks before placing them in the processor to help them breakdown.
  • Add all remaining ingredients.
  • Process until just coming together. If the mixture looks a little crumbly add a dash of water or nut milk until it begins sticking together.
  • Taking about a spoonful at a time, roll the mixture between your palms until smooth.
  • Store in a sealed container in the fridge for up to a week.
