Halloween Monster Donuts

Just in time for Halloween, these delicious pumpkin Halloween Monster Donuts are made with simple ingredients and baked to perfection with a spooky treat on top.

Instructions

  • Preheat the oven to 350ºF and grease a donut pan with butter or organic cooking spray.
  • In a large mixing bowl, combine the oat flour, pumpkin puree, coconut sugar, butter, pumpkin pie spice, salt, baking soda, vanilla, and lemon juice and stir until combined.
  • Using a large plastic bag, add the batter to the bag, cut off the tip, then pipe the batter into the donut pan filling only about halfway. Divide the batter evenly among the 6 donut trays and bake them for about 20 minutes or until golden brown.
  • Remove the donuts from the oven, and let them cool for 5 minutes in the pan. Then you can use a knife to gently remove them out of each tray.
  • Next, combine the ingredients for the dark chocolate icing in a small microwavable bowl. Place the bowl in the microwave at 30 second intervals. Stir the chocolate in between each 30 seconds intervals so all of the chips are just about melted. Continue to stir until the last remaining pieces have melted.
  • Gently flip the top side of the donuts into the melted chocolate to coat the tops of each and place them on a plate. Before the chocolate hardens, place your candy eyeballs onto the donuts wherever you’d like.
  • Continue this process until all of the donuts are complete. Be sure to stir the melted chocolate between each doughnut so it doesn’t harden. Allow the donuts to sit for 10 - 15 minutes for the chocolate to harden.
  • The donuts can be stored in the fridge for up to 4 days for maximum freshness.
