Key Lime Pie Parfait

These Key Lime Parfaits are reminiscent of key lime pie, without all the calories. Sweet, tart and creamy with a fun crunchy sprinkle of graham cracker "crust"

Ingredients

  • 1/2 cup Chobani Key Lime Greek Yogurt
  • 1/2 of a Ripe Avocado
  • Juice & Zest from 2 Limes
  • 1 tablespoon Vanilla Extract
  • 1 Banana Peeled, Sliced & Frozen
  • 1 Package of Crushed Graham Crackers

Instructions

  • Place ingredients Greek Yogurt through Banana in a blender and process until smooth.
  • Place Graham Crackers inside of a Ziplock Bag and gentle break them into crumbles. (I liked to leave a few small pieces that gave me a crunch with every bite)
  • Create the first layer with Graham crackers, then Key Lime Mixture and alternate until dish is filled, ending with Key Lime Mixture on top.
  • Top with Zest from a Lime.
  • Enjoy right away or refrigerate until ready to serve.
  • *Feel free to adjust the lime juice as needed. Try it with one lime first and add more as desired.*
