Mini Apple Pie Cups

These Mini Apple Pie Cups are everything you love about a classic apple pie in a mini version. Loaded with all of the classic apple pie flavors, they're the perfect hand held treat for fall.

Ingredients

Crust

Filling

  • 2 Honeycrisp apples medium size, diced small, very small
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 teaspoon apple pie spice or ½ teaspoon ground cinnamon & a pinch of ground nutmeg
  • Non dairy whipped cream , optional as topping

Instructions

Crust

  • Preheat oven to 325F. Prepare mini muffin tin by greasing.
  • In a large bowl, mix the almond flour, baking powder, cinnamon, and salt with a whisk.
  • In a small bowl, combine egg, honey and the melted butter.
  • Add wet ingredients to almond flour mixture and stir till combined. Let the dough rest for 5 minutes.
  • Press 1-2 tablespoon dough into mini muffin tin being sure you create a large dent in the middle.
  • Bake for 10-12 minutes or until golden brown.
  • Let cool completely before adding apple topping.

Filling

  • While the crust is cooling, heat a small saucepan with the butter. Stir in apples, brown sugar, apple pie spice and cinnamon.
  • Let cook for 4-5 minutes or until just softened. Remove from the heat.
  • Divide the apple filling among the almond flour crust cups.
  • Top with whipped cream, ice cream or enjoy as is!

Notes

You can keep leftover mini apple pies covered in the refrigerator for up to 5 days. Serve them chilled or at room temperature or reheat in the microwave for a few seconds before serving (best choice!).
