Oven-Baked Carrot Fries

A twist on classic french fries, these Oven-Baked Carrot Fries with a Sriracha Aioli dipping sauce makes the perfect side to any dish.

Ingredients

Carrots Fries

  • 4 carrots large
  • 2 tablespoons olive oil
  • 1 teaspoons paprika
  • 1 teaspoons onion powder
  • Salt to taste
  • Pepper to taste

Sriracha Aioli

  • 1/3 cup mayo
  • 2 tablespoons sriracha
  • 1 lemon juiced
  • 1 pinch sea salt
  • 1 pinch garlic powder

Instructions

  • Pre-heat oven to 425F degrees
  • Wash and peel the carrots and cut off the ends.
  • Cut the carrots in half then slice each half in the middle (the long way).
  • When done slicing all the carrots, place them in a large bowl and add the remaining ingredients. Toss the carrots with your hands until all the carrots are evenly coated.
  • Spread carrots in a single layer leaving enough space between them to bake properly. If the baking sheet is too crowded use a second baking sheet. It is important that there is some space between the carrots otherwise they won’t crisp up.
  • Bake for 15-20 minutes, turning them about half way through.
  • While the carrots are baking, mix all of the ingredients for the sriracha aioli in a small bowl.
  • When the carrots are done, sprinkle with fresh Parmesan cheese and parsley and serve with this delicious sriracha aioli sauce.
