Vegetarian Black Bean Taquitos

These easy Vegetarian Black Bean Taquitos make a great party appetizer or main dish! Serve them with all of your favorite toppings!

Ingredients

Homemade Taco Seasoning

Taquito Ingredients

  • 2 tablespoon taco seasoning
  • 1 15 ounce vegetarian refried black beans
  • 1/2 cup sweet corn 1 small 8.75 oz can
  • 12 fresh corn tortillas or flour if you prefer
  • 1 cup dairy-free cheddar cheese shredded
  • Toppings: salsa, guacamole, dairy- free sour cream, cilantro, jalapeños etc.

Instructions

  • Preheat the oven to 400 degrees.
  • Combine the taco seasoning, refried beans and corn.
  • Wrap 1 corn tortilla in a wet paper towel and microwave (1 at a time) in the microwave on high 25 seconds. (If making the taquitos with flour tortillas, skip this step)
  • Scoop about 1 1/2 - 2 tablespoons of the mixture into the corn tortilla.
  • Top with a sprinkle of the dairy-free cheese.
  • Gently roll the tortilla onto a parchment covered baking sheet with the seam side facing down. It helps if you can keep them rolled tightly.
  • Brush with olive oil and complete this process until all of the tortillas are rolled.
  • Bake uncovered for 25-30 minutes, until the edges begin to brown.
  • Serve with your favorite toppings and dips.
