Winter Pomegranate Feta Salad

This Winter Pomegranate Feta Salad is drizzled with a homemade pomegranate salad dressing. This salad comes together in less than 10 minutes and makes a perfect side dish or meal.

Ingredients

Pomegranate Feta Salad

  • 6 - 8 cups spring mix
  • 1/3 cup walnuts halved
  • 1/3 cup crumbled feta cheese
  • 1/3 cup pomegranate seeds
  • 1 avocado sliced
  • ¼ red onion optional, thinly sliced

Pomegranate Vinaigrette

  • 3/4 cup Pomegranate juice
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 2 teaspoons lemon juice
  • 2 tablespoons coconut sugar
  • 1 pinch sea salt
  • 1 pinch ground black pepper

Instructions

  • Make Dressing: Add all the ingredients for the pomegranate salad dressing to a small bowl and whisk together until well combined. Set aside.
  • Assemble the Salad: Add the spring mix to a medium size bowl or plate. Layer the spring mix with all the salad toppings (walnuts, feta, red onion, pomegranate seeds and avocado).
  • Serve: Drizzle the salad dressing over the top of the salad, toss and serve.
