    These Chocolate Covered Peanut Butter Banana Bites are the perfect healthy summer dessert. Keep them on hand for easy snacking and a healthy sweet treat.

    It's safe to say that I've made this recipe way too many times. It has truly become a staple in my fridge every Saturday morning. They're my go to snack that I reach for when I need something sweet. If you're in need for a sweet treat, you're in luck!

    These Chocolate Covered Peanut Butter Banana Bites are just what you've been searching for to fulfill your sweet tooth craving on a hot summer day! The recipe has only 3 ingredients and it's quick and easy to make. It includes banana slices sandwiched with peanut butter and topped with dark chocolate. It's a perfect healthy and indulgent treat.

    What ingredients do I need to make the Banana Bites?

    • Bananas - fresh ripe bananas that have a few brown spot. They should be firm and not "soggy".
    • Peanut Butter - all natural peanut butter without added sugar or oils
    • Dark Chocolate Chips - dark chocolate or milk chocolate chips

    Tips on making the Banana Bites:

    • The bites can last 1-2 months in the freezer, if you can savor them for that long.
    • Remove them from the freezer and let them thaw for about 5 minutes before eating.
    • I like using peanut butter however you can substitute for your favorite nut butter
    • Add a sprinkle of sea salt to the tops of the chocolate for a salty sweet combo

    Chocolate Covered Peanut Butter Banana Bites

    These chocolate covered peanut butter banana bites are the perfect healthy summer dessert. Keep them on hand for easy snacking and a healthy sweet treat.

    Ingredients

    • 2 bananas ripe
    • 1/3 cup peanut butter
    • 1/2 cup chocolate chips

    Instructions

    • Peel and slice the bananas, about 1/4 inch thick.
    • Line a platter or small baking sheet with parchment paper.
    • Place about 1/2 teaspoon of peanut butter on a banana slice and top with another banana slice to make little sandwiches. Continue this process until all banana slices are used and you have about 12 bites.
    • Place bites on the parchment lined baking sheet or platter and place in the freezer to harden for about 20 - 30 minutes.
    • After the bites have been in the freezer for about 20 to 30 minutes, melt your chocolate in a microwave-safe bowl, in 30 second increments, until chocolate is completely melted.
    • Remove the bites from the freezer.
    • Take a spoon and pour the chocolate one the tops of each sandwich bite, allowing the chocolate to run down the sides. You can coat the full bite with chocolate, but you'll need more chocolate chips if you want to do this.
    • Place the bites back in freezer to harden up, for about 15 minutes.
    • After the 15 minutes, the bites are ready to eat or you can transfer the bites into a freezer safe storage container.
