    These Mini Apple Pie Cups are everything you love about a classic apple pie in a mini version. Loaded with all of the classic apple pie flavors, they're the perfect hand held treat for fall.

    They say, "The best things come in small packages." When it comes to these Mini Apple Pie Cups, it's definitely true! It's a healthier apple pie recipe, in a mini version.

    When it comes to the fall season I absolutely love all things pumpkin but there's so many other great fall flavors that don't get as much attention like Chai, Butternut Squash and Apples! These mini apple pie tarts are exactly what you need to get you in the mood for apple season..

    This small batch mini apple pie recipe is so delicious and an easy fall dessert. They're made with a homemade almond flour crust and apple filling. Enjoy them as a sweet dessert topped with whipped cream or even ice cream. This healthy mini apple pie recipe is the perfect bite size dessert that you can just pick up and enjoy. You can easily eat two or three (or four) without the guilt. Mini desserts are clearly just better than regular desserts!

    Ingredients You'll Need

    These mini apple tarts may be small but they're packed with apple pie flavor! To make the pies you only need a handful of ingredients. Below are the key ingredients needed in this recipe:

    • Almond flour - used to make the crust
    • Egg 
    • Fresh apples - I used Honeycrisp apples for this recipe. about 2 cups of roughly chopped apples, about 2 large apples. 
    • Butter - vegan butter can also be used as a substitute
    • Fall spices - cinnamon and apple pie spice
    • Brown sugar - or you can use coconut sugar as an alternative

    What are the Best Apples to Use?

    This depends on your preference. Some apples are sweet while other apples are tart. If you like sweet apple pies, Gala apples, Pink Lady or Honeycrisp apples are a good choice. If you prefer a tart apple pie, using Granny Smith apples is the better option. But feel free to use any kind of apple for this recipe or use what you have on hand.

    How to Make Mini Pies in Muffin Tins

    Instead of using store-bought pie crust to make these pies, I decided to make an almond flour crust. The filling is a healthier filling than using the can apple pie. It's just a simple mixture of chopped apples, butter, brown sugar and apple pie spice. Then top the almond flour crust with the apples and bake it.

    To Make the Almond Flour Crust

    1. In a large mixing bowl, mix the almond flour, baking powder, cinnamon, and salt with a whisk.
    2. In a small mixing bowl, combine egg, honey and the melted butter.
    3. Add wet ingredients to the almond flour mixture and stir till combined then let the dough rest for about 5 minutes.
    4. Press 1-2 tablespoon dough into the mini muffin tin, being sure you create a large dent in the middle.
    5. Bake for 10-12 minutes or until golden brown.

    To Make the Homemade Apple Pie Filling

    1. Heat a small saucepan with the butter.
    2. Stir in apples, brown sugar and apple pie spice.
    3. Let it cook for 4-5 minutes or until just softened. Remove from heat.
    4. Divide the apple filling among the almond flour crust cups.
    5. Top with whipped cream, ice cream or enjoy as is!

    How to Store the Mini Apple Pie Cups

    Once they're completely cooled, the individual apple pies can be stored in an airtight container in the refrigerator for 5-7 days.

    These muffin tin apple pies are a great bite sized dessert that you can enjoy in a variety of ways, here are just a few:

    • Eat them plain 
    • Dairy-free whipped cream or cool whip on top of the pies
    • A glass of plant based milk
    • Serve the apple pie bites with a side of scoop of vanilla ice cream

    Best Tips to Make the Mini Pie Shells

    • After mixing the dough, remember to let the dough rest for 5 minutes.
    • When spooning the dough into the muffin tins, press about 1-2 tablespoons of dough into each mini muffin cup making sure you create a large enough dent in the middle for where the apples will go.
    • Bake the crust until you notice they begin to turn a nice golden brown, do not over bake them, and let cool completely while you make your apple pie filling.

    What size muffin tin should I use?

    Be sure to use the correct size muffin pan for this recipe. These are mini apple pies, which require using a mini muffin pan.

    Do you have to peel the apples?

    No, If you want to skip peeling the apples, you can leave the skin on just make sure to wash the apples well. 

    How long can I store the pies at room temperature?

    I recommend only storing them at room temperature for no longer than 2 days.

    Should the mini apple pie tarts be refrigerated after baking? 

    They will keep longer if they're refrigerated. Once they're completely cooled, the pies can be stored in an air-tight container in the refrigerator for 4 - 5 days.

    How do I reheat the mini pies?

    You can reheat them in the microwave for 15 second intervals. If they get too hot, let them cool slightly before eating. 

    Can you freeze apple tarts?

    Yes,  you can freeze them for up to 3 months. To thaw them, place them in the refrigerator overnight or let them sit out for a few hours to defrost.

    • 24 cup mini muffin pan

    Ingredients

    Crust

    • 2 cups almond flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon sea salt
    • 1 egg
    • 2 tablespoons honey
    • 2 tablespoons butter melted

    Filling

    • 2 Honeycrisp apples medium size, diced small, very small
    • 1 tablespoon butter
    • 2 tablespoons brown sugar
    • 1 teaspoon apple pie spice or ½ teaspoon ground cinnamon & a pinch of ground nutmeg
    • Non dairy whipped cream , optional as topping

    Crust

    • Preheat oven to 325F. Prepare mini muffin tin by greasing.

    • While the crust is cooling, heat a small saucepan with the butter. Stir in apples, brown sugar, apple pie spice and cinnamon.
    • Let cook for 4-5 minutes or until just softened. Remove from the heat.
    • Divide the apple filling among the almond flour crust cups.
    • Top with whipped cream, ice cream or enjoy as is!

    Notes

    You can keep leftover mini apple pies covered in the refrigerator for up to 5 days. Serve them chilled or at room temperature or reheat in the microwave for a few seconds before serving (best choice!).
