    Watermelon is probably my favorite thing about summer. It's sweet and juicy, making it the perfect treat to quench your thirst during the summer heat. It's also the best to enjoy during the hot summer months when watermelon season is at its peak since there's plenty of sweet watermelon available! This refreshing Watermelon Cucumber Feta Salad is summer in a bowl! It makes the perfect side dish for summer BBQ's, picnics, and pool parties! Not only is this fresh watermelon salad delicious, it's also incredibly easy to make. It's the perfect Summer Salad Recipe.

    Benefits of Eating Watermelon

    I love shopping for fresh produce when it's in season. There's many fresh summer produce you can use to make simple salads such as berries, grapes, cherries and of course watermelons. If you're making this Watermelon Salad in the summertime, this is when watermelon season is at its peak! They're packed with nutrients and are water filled, it's the fruit to have in the summer heat.

    Some benefits of eating watermelon are:

    • Helps you stay hydrated - Staying hydrated is important for your body to function properly. Watermelon comprises 92% water. About 1 cup (154-grams) of watermelon contains over a half cup (118 ml) of water.
    • Helps improve skin health - Vitamin C - either when eaten or applied topically - helps your body make collagen, a protein that keeps your skin supple and your hair strong. Vitamin A is also important for healthy skin since it helps create and repair skin cells.
    • Helps improve digestion - Watermelon contains plenty of water and a small amount of fiber, both of which are necessary for healthy digestion.

    Ingredients You'll Need

    Made with just a few simple ingredients that you can find at your local grocery store. Here is what you'll need to make this refreshing summer salad. 

    • Watermelon: seedless is the best
    • Cucumber: I like to use english cucumber 
    • Red onion
    • Feta cheese
    • Fresh mint leaves
    • Lime juice
    • Chili Lime Seasoning

    Step-By-Step Instructions

    1. Add the diced watermelon, cucumber, red onion, mint leaves and lime juice to a large mixing bowl. 
    2. Toss everything together until well combined. Refrigerate the watermelon salad until you are ready to serve.
    3. When you are ready to serve, add the feta cheese and the chili lime seasoning, toss gently and serve.

    Storage Tips

    This salad is best the day it is made, but will be fine for several hours. I like to serve it chilled, but it's good at room temperature too.

    If you want to make the salad in advance, you can cut up the watermelon red onion and cucumber, but keep them in separate containers in the fridge so they don't get mushy. When ready to enjoy, combine everything in your large bowl and add in the feta, mint, lime and chili lime seasoning and enjoy!

    • 4 cups watermelon cubed
    • 1 cup English cucumber diced
    • 1/4 cup red onion diced
    • 1/3 cup feta cheese crumbled
    • 1/4 cup mint leaves chopped
    • Juice of 1 lime about 2 tbsp
    • chili lime seasoning to taste
